Nutty Bubble Cake (Nuts and Bubbles Cake)

Nutty Bubble Cake is a Bakery and Catering style, a simple cake that started appearing on the bakery menus of Kerala in 2018. It became trending and extremely popular across the bakeries of Kerala in 2019. The origin is thought to be from a bakery in Kannur, but that is subject to debate.

It became more popular than the regular orders of Black Forest cake within a short period. The cream-filled sponge cake with the addition of dark chocolate and nuts was the main pull. Also the strange and ‘new’ design of piped bubbles over the top. Hence the name Nutty Bubble Cake  OR  Nutty Bubbly Cake. The flavor of the sponge ( and sometimes the whipped cream ) is unique also. The malted choco flavored Boost is added. Every ’90s kid must be familiar with Boost’s famous catchphrase – delivered by Sachin Tendulkar during that era – ‘Boost is the secret of my energy. Boost is known for being the more nutritious among the malted health drinks like Bournvita and Complan.

If you don’t like the flavor of Boost, you can try Ovaltine or Milo powder instead. That being said, the ‘Boost’ flavor is quite mild and pleasing in this recipe, even for those like me who don’t like ‘Boost’!

The decoration is extremely forgiving and even the average baker, can make the cake look quite decent. My child has mild trypophobia, where she has an aversion to the clusters of circles on the cake. But everyone agreed the taste was yummy! So for those who don’t like the bubbly design, you can make a marbled effect instead. However, there are also those who find this pattern very unique and Instagram-worthy.

How to make Nutty Bubble Cake- Recipe at a glance:

  • Separate eggs. Beat separately. 
  • Sift dry ingredients.
  • Fold in dry ingredients with beaten egg yolk sugar mixture. Fold in stiff egg whites.
  • Pour into the prepared cake pan and bake till done.

Ingredients:

  • 1 cup pastry flour for cakes / all-purpose flour
  • 2 Tbsp Boost (or use your other preferred malted choco-milk powder- like Ovaltine, Milo etc)
  • 1 tsp Baking powder
    1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/4 cup plus 1/2 cup extra fine caster sugar
  • 1/2 cup sunflower oil
  • 1 tsp Vanilla extract
  • 2 Tbsp Milk

Other:

  • A small amount of Butter and Flour (for prepping the baking pan)
  • 2-3 Cups whipping cream, icing sugar, and vanilla extract to taste
  • Chopped or sliced Cashewnuts, Almonds, and miniature chocolate chips- about 1/2 cup each. Chopped Pistachio may also be added.
  • 1/2 cup sugar syrup (made by boiling sugar and water till thickened into a syrup)
  • For the bubbles – Use condensed milk  Or use homemade Dulce de Leche OR  White Chocolate Ganache

White Chocolate Ganache:

3 Tbsp White chocolate
2 Tbsp Cooking cream
1 tsp salted butter
